Let’s Talk Pizza!!

I know pizza night is a favorite in the Marlowe house, but let’s be honest, pizza isn’t always the healthiest thing to eat. So we have decided to take our traditional homemade pizza, and take it up a notch to give it a little healthy twist! Pizza on a cauliflower crust. What? Yes! It is delicious! And I think I have finally perfected it!!

Cauliflower Pizza Crust
Ingredients:
1 whole cauliflower
2 eggs
3/4 cup gluten free flour (optional)
1/4 cup shredded Parmesan cheese
1/4 cup shredded mozzarella cheese
1 tsp salt
2 tsp oregano
1 tbsp crushed red pepper (optional)
Parchment paper

Preheat the oven to 400 degrees. Chop up the cauliflower and boil for 10 minutes. Once cooked, mash up the cauliflower and place in a clean dish towel. Ring out all excess water.. Really put some muscle into it. You want to get out as much water as possible!
In a separate bowl, beat the two eggs and add the salt, oregano, and crushed red pepper. Add cauliflower and gluten free flour. Mix well! (Remember the gluten free flour is optional. I like to add it so it gives the crust a nice chewy texture).
Place parchment paper on a cookie sheet and using a spatula, spread the cauliflower mixture to form your crust. You want the crust to be approximately 1/4-1/2 inch thick.
Place it oven at 400 degrees and let bake for 30 minutes. **this recipe is enough to make one crust. Will need to double or triple if making more than one pizza**

Once the crust is done, add sauce, cheese, veggies, meat.. Whatever toppings you like! Bake the pizza for an additional 20 minutes once topped. And enjoy!!

**when using veggies, I suggest you cook them a little before adding them to the pizza .. Of course this is just personal preference**
